18. Green Cabbage Soup

A fun way to use green cabbage in soup other than regular salad mixes.

Servings: 4

Prep Time: 10 mins

Cook Time: 10 mins

Ingredients:

3 tbsp olive oil

2 medium carrots, peeled and chopped

1 medium red onion, thinly sliced

3 garlic cloves, finely sliced

1 large green cabbage, cut into small chunks

4 cups vegetable stock

½ cup chopped fresh parsley

1 tbsp fresh dill leaves

Salt and black pepper to taste

Parsley leaves to garnish

Instruction:

1. Heat olive oil in large pot over medium heat and sauté carrots and onions for 5 minutes or until softened. Mix in garlic and cook until fragrant, 30 seconds.

2. Stir in cabbage, vegetable stock, chopped parsley, dill, salt, and black pepper.

3. Cover pot, bring to a boil and then simmer for 3 to 4 minutes or until cabbage softens; adjust taste with salt and black pepper.

4. Dish soup, garnish with parsley and serve warm.
